After installing the new BIOS, it's still rebooting randomly. The new BIOS did not fix the  ...

dang.  Beelink sent me an email back about clearing CMOS, changing HDMI cables, and re-seating the RAM and storage.  I did all of the above and still having re-boot issue.

Ok, I found something interesting about the reboots

If I take one of the RAM modules the reboots go away, no matter which one, just lowering the RAM from 32G to 16G and the reboots go away. Both modules are OK, I tested each one individually so it is not a faulty RAM module. 

I still think is a BIOS problem and I hope the fix the problem

I am using multiple displays.  I've tried various ways, USB-C, DP, HDMI combinations. Same issue.

Have you tried to take out one of the RAM modules? that worked for me

  I have GTR7 Pro, same issue, it will reboot itself every few minutes, especially running application, right before it reboots, video would freeze while audio still playing, then the screen would go blank and reboot.  

I tried 4 different brand of monitors, single or dual setup, same trouble.

Hopefully Bee-link will come up with a fix shortly and I can start using the mini PC.

Maybe I will remove one of the 16GB RAM module like nnombela suggested this weekend to see it help or not.

Today I removed one RAM module at a time, swapped and put one module back in different slot suggested by nnombela.  Still same issue.  The monitor will go blank and go into reboot,  When I am running a application, it will reboot in 2-3 minutes, if I am web browsing, it might take longer to go into reboot, in about 10 minutes.

Basically, the PC is useless at this time.

I have two GTR 7 Pros and both were randomly rebooting by themselves. After taking out one of the RAM modules, the rebootings stopped. One of the BIOS is dated 6/5/2023. The other I updated it with a newer BIOS Beelink sent me, dated 6/13/2023.
