I had the same/very similar issue with my GT-7 and Windows 11 recently. Just as you itemize.
I swapped keyboard/mouse, changed USB ports, etc. Because it seemed like the input was freezing but not the entire system, since video streaming or other I/O tasks continued when input would freeze between 1-5 seconds typically, randomly. This happened for about 2 weeks, came out of the blue, after my GT-7 had Windows 11 Pro installed for months. Got a Windows 11 update last Friday, and the problem has not happened since. I am NOT sure the update addressed the issue, the update has no reference to any thing that suggests this. But fingers crossed, the issue does not come back. Oh, and watching process task manager, gave NO indication of what the freezes where related to, no specific process or application seemed to be hugging CPU or other resources at the time of the freeze, which suggests in my case, the issue was USB device related some how, which Windows OS does a poor job of exposing or monitoring via the device manager. Searching the Event Logs for Windows I could find NO warnings or errors for the freezing issue as well. So what causes it is a real mystery. A Google search, shows others have had the same issue in various forms, so it is hard to isolate if this is really hardware or software related, and does not seem to be vendor (hardware) specific. So really does suggest this is more software related than not. But is not a definite declaration at all.
FYI, I use Crystal as well, that did not, for me, suggest anything was at issue, my SSD is not BeeLink provided, I have a WD Black SSD installed at the moment. I do have a couple of SSD modules, so the next step, if the issue returns will be to install Windows 11 Pro on a different SSD module on my GT-7, see if the issue returns on the new install on the different SSD module. But I really do believe this is software/driver related, given what I have seen so far.
I also plan to do some USB disk based IO loading to see if I can recreate the issue, if I can, then at least I have isolated my issue down to loading or issue with USB support under Windows 11 Pro. In the past, I routinely backup to external USB 3.0 drives while watching streaming videos, and reading my email at the same time, never seen these random short freezes until just recently.
