All right...well the upgrade process was annoying to say the least.
I'm writing this here in case anybody else runs into the same issues as me and is frustrated.
Read their little guide carefully first:

A few things that weren't entirely obvious to me:
1. I don't know what the hell the OTA update thing (within the OS of the GT1 mini) even does but I've never seen it find an update since day 1 of owning the GT1 mini.
2. One would think one could apply whatever updates via USB or SD card but the SD card update method is for "small" updates according to some other post I read on this forum.
3. Unplug GT1-mini from everything (power, HDMI, ethernet, USB drive).
4. Unplug all USB devices from your pc.
5. Start USB Burning Tool (what they call the program which updates the firmware via USB cable for some reason).
6. Import firmware file - it doesn't say success or give you any kinda confirmation that it's "loaded" but the little box goes away after loading and you'll see at the bottom of the window the firmware file location.
7. Click Start in USB Burning Tool (notice you haven't connected the GT1 mini yet and that's important). Watch homeboy do it here in the sideways video:

8. Connect USB cable to whichever USB port on your pc that the program see's as HUB1-1. This will take some experimenting to figure out which one it is.
9. Connect other end of USB cable to right-side port of GT1 mini - not the left-side (since we all have USB to USB cables just laying around - I had to specifically order one for this).
10. At this point, it starts updating and a successful one will take approximately 3:30 minutes.
11. Until I followed the exact instructions above, my update process timed out several times - the errors in the log file actually said "timeout". I imagine if I never would have gotten it to 100% update, this would have left the GT1 mini in a bricked state - which is lovely.
