SER7 - Drivers not found and BSOD and only one monitor found

Hi All,

Some Background - I was a IT developer and for many years built my own PCs, but the last home computer I bought at a local computer store. It's lasted 10 years and no problems. Just used for basic web surfing and MS Office - no gaming. I just thought it was time to update. So I decided (Oct 2024) on a mini PC - Beelink Ser7 with BIOS v38.
PS: So far my old PC (Intel i7 6700) is not any slower and is at least stable. So far this upgrade has been a waste of time and many hours of my life.

3 issues ...
1) It would not recognise a second monitor. I fixed this by installing the AMD Adrenalin drivers. I've read some think there is some conflict with HDMI and DP being used together also others mention you need to used certain type of cable. (Not true as it did work without changing cables)
2) After the AMD drivers both screens now flicker - freeze and/or display the BSOD which ends then reboots itself. This happens after 5 to 10 mins.
3) Device Manager will not install the Beelink SER drivers. Message from windows device manager "Windows can't find the drivers". (this could be simple but I just don't know what's wrong here)

So I've spent many hours trying to fix this over the past 3 days. A lot of that time has been reading the Beelink forum looking for advice and answers to my above listed issues. I've had little to no success so I thought I would ask for assistance.

Things I've tried.
1) Reinstalled Windows 11 Pro.
2) It would only recognize one monitor connected to HDMI. The other monitor connected to Display Port did not work.
3) Used Device Manager to try and install the Beelink downloaded SER 7 drivers. Windows would not find the drivers.
4) Installed the AMD Adrenalin driver program and the drivers.
5) 2 monitors worked - YEA but...
6) Now I keep getting BSOD (reboots itself.) every 5 or 10 mins or freezes and then screen blinks black and returns.
7) So Uninstalled AMD Adrenalin driver program and its AMD Drivers.
8) Back to only recognizing one monitor connected to HDMI. The other monitor connected to Display Port did not work.
9) Installed Windows 11 Pro again.
10) Used Device Manager to try and install the Beelink downloaded SER 7 drivers. Windows would not find the drivers.
11) Going in circles
