could any of the latest SERs run on Windows 7 by doing a fresh install?

Does beelink use propriety drivers for its hardware?

Windows 7 is EOL installing it can lead to dangerous consequences. Also no support at all. Run it in a virtual machine, on supported OS.

Does anyone know if windows 7 can be installed and/or whether the SERs use proprioetary drivers?

Last time I tried on a desktop, on Ryzen 1st gen, it didn't install the pci-e bus. Some mobos supported windows 7, but that was a long time ago. These new gen ryzen, no chance :)
