When the PC is first turned on and setting up Windows 11.  Instructions that came with the machine state that in order to setup Windows on the device to disable the Wi-Fi adapter, however it gives no instruction on how to do that.  And there are no visable external controls for turning Wi-Fi adapter on/off. So HOW?  Because the setup sees the Wi-Fi adapter it will not allow any choice other than to connect.  No way to bypass that screen that I can find.

To disable Wi-Fi, go to Bios Setup :
-> Advanced
-> Demo Board
-> PCI-E Port
-> Device 2 Fun 2 : Change Auto -> Disable
Save Bios and it's OK
