I have two Beelink SEI Mini PC that randomly shut down. I've checked all removable hardware. Is there a BIOS update?

Your BIOS is the latest one.
Does your PC overheat ?
Did you try to update the graphic driver ?

Both are exhibiting the same behavior. I had the device completely out of the case and it still shut down. The heat sink fan is working. Should I remove and reseat the cooler?

If the fan works fine, and the temperature is not high, it might be the hardware problem.
① Please use memtest to test the RAM
② Please have it checked in your local work place or you can send it back to China for checking and repair.

You can use Aida64 or CPU-Z to check the CPU temperature.
